Farms supporting the BC Farm to School Salad Bar Initiative are for the most part small scale. Many are located within 100 miles of the school. Because schools serve a selection of 6 vegetables, 3 fruits, 1 grain and 1 protein twice per week, the primary food supplier is often a farm that produces fruit and vegetables. Production practices are both organic and conventional. In some cases farmers have come together to form a cooperative. Schools work directly with a representative of the cooperative to access a wide range of local foods that in most cases would not be available if sourcing food from a single farm. In the South Okanagan region a single cooperative is providing local organic fruits and vegetables to 5 schools! Community gardens add a unique dimension to Farm to School Salad Bar programs. In addition to contributing fresh produce for the school salad bar, they provide an excellent venue for experiential education. Children can visit the community garden for a “hands on” experience growing and harvesting food. Because community gardens tend to be a focal point for community food security activity, they play an important role in linking schools to a variety of resources – from farms and farmers markets to community shared agriculture, composting, community kitchens, and good food box programs.
